Engineers are required to build and man all of your siege equipment in and out of the castle. They also man the oil smelter and oil pots. These units are automatically trained in the engineer's guild and don't require any peasants. Engineers equipped with oil should be placed on walls and towers and set to fire at will. They will then spill burning hot oil on approaching enemy units and head back to the smelter to refill.
